


A tribute to Émile Rapin
Le Maréchal, an artisanal style cheese prepared in the heart of the Vaud countryside celebrates the tradition of authentic and conscientious craftsmanship
Its name honours the great grandfather of the Rapin family, Émile Rapin (1852 à 1943), a blacksmith from Corcelles-près-Payerne. Deeply devoted to his work, with a generous heart and a hearty appearance, Emile represents the values true to this cheese, both original and generous in its nature.




A family, a passion…
Produced in the artisanal cheese making facility of the Rapin family, Le Maréchal is a melt-in-the-mouth cheese, whose flavor is subtly accentuated by the addition of organic herbs. Twice a day, Jean Michel, Grégory, Kevin and Mathias Rapin open their doors to the fresh and still hot milk delivered, by 13 farms from the Vaud region.
In accordance with local cheese making traditions, the Rapins transform the milk into cheese no later than ten hours after the cows have been milked. The cheese is then wrapped in cloth and pressed into molds. During the ripening phase, the Rapin family adds a mix of aromatic organic herbs.

Le Maréchal is produced using milk supplied by 13 local farms. Respectful of nature and their cows, the local producers guarantee the quality of their milk which is naturally rich in Omega 3. The Omega 3 are also naturally found in the Le Maréchal cheese.




Good for the cows, good for the planet!
Thanks to a special fodder, naturally rich in linen seeds, the health of the dairy cows which supply Le Maréchal cheese is greatly improved. This special fodder improves the cows’ digestion and the quality of their milk, just like spring time grass does in nature. Better digestion means less methane emissions (or gas!) and therefore less CO2. That is great for the planet - each year the cows emit 138 Tons less CO2, translating into a savings comparable to 718’460 less miles traveled by car!

Ingrédients pour 3 personnes
500 g de Maréchal râpé fin, 3 oeufs frais, Maïzena, Bière, Lait, Pain Epices: muscade et poivre
Mélanger dans un plat 500 g de Maréchal râpé, 3 oeufs, 2 cuillères à soupe de maïzena, 1 dl de bière, poivre et une pincée de muscade. Brasser le tout jusqu'à obtention d'une pâte homogène puis appliquer cette pâte sur une tranche de pain préalablement humidifiée avec du lait.
Mettre au four chaud (environ 250 degrés) durant 15 minutes, sous surveillance.
Servir avec une salade et un verre de vin blanc.
